Talking about the convenient matches on a cheese in general and to one as the DO Idiazabal, in particular, could bring to write an infinity of recommendation books.

However, our way to enjoy a cheese is limited, and this is how it should be, to the person that is going to enjoy it, who has to be pleasured and satisfied on what he has done. After all, each one of us establishes the best matching.

In the following lines the opinions that we express are long-time experience based, and the only pretension it is just to comment on them in a general and simple way how we believe that this cheese should be enjoyed.

The first thing that we say is that a good cheese of the D.O. Idiazabal combines quite well with a good white bread. It is obvious, but it is fine to remember it anyway. It is an infallible ally to always enjoy it.

And as each region is a world, each cheese has been developing a natural matching forged along the time with the typical drinks of the zone. In the Basque Country case our cheeses have always shared table with drinks like cider, txacolí or wines of the Rioja Alavesa and Navarre. And this is like it continues happening.

But in a more general way we could say that for the less matured cheeses, with a fresher and softer taste, would match with youngster white and red wines. While for the more matured cheeses, which are stronger in flavour, the matching with a breeding red wine with body and well balanced, as well as the camomile or purpose ones, we believe that are an ideal counterpoint to fully enjoy the DO cheese and the wine.
