Artzai-Gazta
Artzai-Gazta, that means Shepherd’s Cheese in Basque, is the name of the association founded at the end of the 80’s that was set up with the aim of working to improve and guarantee the quality of our cheeses, this gastronomic exquisiteness that 130 producers of Alava, Guipuzcoa, Biscay and Navarre elaborate.
The Association Artzai-Gazta worries about assuring the excellence supporting to all of its associated producers to continue with those ancient making processes, and to foment the incorporation of technologies and innovations that improve the final results of the cheeses.
The cheese that we, the associated producers, elaborate have the unripe sheep’s milk of our autochthonous herds of latxa and carranzana sheep races as raw material, what is the distinctive fact on which we make cheese, because they produce an excellent quality milk.
The labour realized by Artzai-Gazta and the Regulatory Council of the Denomination of Origin Idiazabal in favour of the artisan producers to unite and promote the best of the legacies with the possibilities that current advances allow, has lead to that the 80% of the producers associated to Artzai-Gazta are members of the D.O. Idiazabal In these cases, our cheeses take proudly the D.O. labels as well as the Artzai-Gazta one as guarantors of the maximum quality of the raw materials used and the respect for the making processes and environment which success in a unique product.
